The other day I tried cooking tortang talong. The first step would be to grill the eggplant until it's all soft so it can be flattened. Then you peel the skin and fry it with scrambled egg.
This was my first time to cook it and I didn't follow a recipe. I didn't know that you're supposed to dip it in scrambled eggs. So my final product looked more like scrambled eggs than how the traditional tortang talong looked.
